Agua de Jamaica is a refreshing “fresh water” made by steeping dried hibiscus flowers to make a tea and then adding fresh lime juice and simple syrup. Alternatively, cinnamon sticks and/or fresh orange juice can be added for additional flavor.

Ingredients
3 quarts Water

1/2 cup Dried Hibiscus Flowers
2 1/2 cups Simple Syrup (2 cups sugar + 2 cups water)

1 1/2 cups Lime Juice (approx. 10 limes)
Fresh Lime or Orange Wedges (optional)
Directions
Add water to a large pot and bring to a rapid boil.
Once boiling, add hibiscus flowers and allow to boil for 30 seconds, then remove from heat.
Cover pot and let hibiscus flowers steep for 30 minutes.
Strain into another large container, discard flowers and allow liquid to cool.
To make simple syrup, combine equal parts sugar (2 cups) and water (2 cups) and heat over the stovetop until sugar dissolves. Allow to cool.
Once hibiscus liquid has cooled, add simple syrup and lime juice. Mix well using a wire whisk or spoon.
Pour over ice and garnish with a fresh lime or orange wedge and it’s ready to be enjoyed!
Can be stored covered in the refrigerator for up to a week.
